French Polishing is a TECHNIQUE of applying shellac to usually wooden things, like violins, and exotic furniture.
Basically it's all about applying thousands of microscopically thin coats to build up a clear yellow and warm coating that shows off the grain and texture of the timber...
IF it's really well done - it's superb.
However, aside from exotic objects, I have gone with lanolin applied as a timber treatment - because it's durable and easy to reapply a thin coat every 5 or 10 years....
This is for indoor furniture and workshop items and dinner tables etc...
Shellac stains from hot cups of tea with liquid under them etc...
Where as sheep grease doesn't give a fuck, and it's easy to clean
