InHg = Inches of Partial Vacuum - or how far it is sucking up a vertical column of MERCURY, in traditional glass pressure / vacuum gauge.

And

CFM is Cubic Feet Per Minute of Free Air. 12 CFM = a square of 1 foot by 1 foot and 12 feet long.
That is how much air the vacuum pump will move in a minute.

But as the volume of pumped out air drops, the partial vacuum or pressure drop on the suction side increases.

So the pumping rate, the partial vacuum pulled, and the power of the motor to do it, all tie in together.
