All major lamb indicators – National Light Lamb, National Trade Lamb, and National Heavy Lamb – have reached record highs due to winter supply tightening.

Seasonal Factors:
Lamb production is seasonal, with supply typically lowest in winter, which drives prices up before easing with the arrival of new-season lambs in the spring.
Export Demand:
Strong export demand is a major factor, with record lamb exports in May.
Processor Activity:
Processors are shifting to volume-driven procurement to maintain throughput, indicating a high demand for lamb.
Specific Examples:

Trade lambs have temporarily outpaced heavy lambs in price due to demand for available finished stock.

A "bidding war" between processors pushed heavy export lambs to record prices at Griffith, NSW.
At Griffith, heavy lambs reached $431 per head, which was a new national record at the time.
Similar record prices were seen at Ballarat and Warracknabeal, with prices reaching $400 and $410 per head respectively.

A hint - with your lamb coming from Australia.....
I was talking to a local butcher and I asked him, "Can he do a side of lamb?" - usually comes to $13 or $14 a kilo in bulk.

He said, "No - the prices have shot through the roof...." - He could not afford to buy lamb to stock his shop with it. I don't know the averaged price per kilo for a side of lamb, but if he can sell it for $13 or $14 a kilo, he is getting it say for around $8 a kilo - AND the supermarkets are retailing the best cuts (meat to bone ratio) for $35 a kilo... AND they are all competing, especially when it gets expensive... that must mean they are getting it for say $28 a kilo... or more and selling it at $35... and that is after discounting it 20%....

AND with my scrambled brain, I think the cheapest cuts at the supermarket, were about $17 a kilo, and the going prices (a bit scrambled) but I recall they were about $26 - $35 a kilo
