Sour mash whiskey is like sour dough bread in that they take some of the last batch to ferment the next batch... once they create alcohol they heat it up to the temperature where alcohol evaporates but water does not.. alcohol has a lower evaporization temperature so it can be seperated from water.. it is what travels through the tubing to the re-condensation container.. like a spirit leaving the body .. ;) it's called distillation.. that is how they refine oil products.. they heat the crude and see what rises.. from tar to various weights of oil to solvents.and gasses... distillation through heat and gravity..
