I bought a gas barbecue grill a month ago... pulled the burner shields out.. cut an old grill grate to sit on the burner shield ledge,, Put lava rocks from the walmart landscape section , on that grate and then cook grate over it.. so the flame heats the rocks.. so I can put wood chips on the lava rocks for smoke flavor.. A trick an older friend showed me years ago.. Made salmon freom Aldis.. so good.. just olive oil and slight sprnkle of everglades seasoning..

7 minutes each side and let sit awhile over the hot rocks with flame off.. 16 minutes total.. so easy and high quality fish.... 17 dollars for a large half fish with skin.. great deal.. great fish..

I don't know the configuration and insulation, but you can add fan forced air circulation to get more even heating across the pizzas in higher production rate runs, but only to a point....

And the little metal thing - that is the thermostat sensing unit.

What ever you do - keep it in it's position and do NOT flex, straighten, pull on, bend or kink etc., that tiny copper pipe that goes between the chamber at the end, and the thermostat temperature controller - if it fractures and leaks, it will stop working and you will have to get another other.

Gas ones control the temperature by gas flow and the electrical ones control the power, either directly or by a relay.... so don't fuck with it, unless it's switched off and then UNPLUGGED.

There is a genuine risk of electrocution if it's damaged and then needing replacement - and it's still plugged in.

IF the original model is very expensive or hard to get - similar models with similar temperature ranges - and similar in size and connections and connection locations and mounts etc., can be used.

Depending - some thermostats can be fairly low price and others can be worth hundreds....


Yeah this is an OLD gas oven thermostat.... Not electrical.

I'd say the push in pull out function is to enable the pilot light to be lit, and the oven to then self regulate on the thermostat alone.....

Get the instruction book for that make, model or series and type.

If there is any problem with the thermostat - you can get a replacement - either make, model, series etc., from the manufacturer, a spares supplier or the same manufacturer, sells the same basic oven with different brand names and knobs etc., under different names.....

It MIGHT be worth it to get a proper gas fitter to do all your connections for you, and or to use TEFLON sealing tape, and use the right connections and thread types and fittings - also use soapy water in a cup and a brush to test joints and fittings for leaks... GAS is relatively sane, safe and easy to use... but if you fuck it up you can easily level a building. But they can only be done in remote locations, and the debris goes for miles and is scattered over a HUGE area...... It’s not electric. The sensor was in the back. I thought it was loose but guess not. Nothing broken or twisted. We will find out in a few hours if it’s working properly.

@Alpha Male Lifestyle: AND put an "ON AND OFF" gas valve, as a HARD connection on the end of the pipe, and then plumb your gas from that. Turn off the gas at the shop entrance - or where is comes into the shop..... Or with the gas at I dunno 20 PSI or 5 PSI , shooting out of an open pipe, while you fiddle with the fittings and connections - could be bad. Then plumb to your oven from the valve. ALSO - get a drill and use concrete bolts to hold the oven stand to the floor and the right bolts to hold the oven to the stand, it stops the gas lines either moving or getting yanked off if there are things that cause the oven to get ripped loose... like earthquakes, people falling off ladders, or slipping over on wet floors.... Ask me about my marvellous 10 ton book shelves, or falling out of bed - that has a 1.2 meter drop to the floor, because I used a kitchen chair instead of a proper set of stairs like you get at loading bays with hand rails...... Could have been in a wheel chair for life from that fall....
