Well you can learn a great deal every day.... I for one had never seen a wok / that big ever.... AND it being used..... and IF the place was REALLY busy - I dunno... maybe you could feed 5000 people at a time, 3 meals a day, every day - or more... I don't know.... and I made no effort to calculate volume and meal mass etc... BUT I did figure out how to make a really hot 2 stage heater that uses much less wood, and far more efficiently.....

There is enough height from the cooker, to make a GREAT high draft vacuum to run a fierce blow torch under the main part of the bowl and to recirculate the not so hot gasses back around the upper 1/2's of the bowl.....

I estimate about 60 BIG chunks of mostly meat, some meat and some bone and some smaller bits of mostly bone with some meat.... Guessing at say 3Kg on average... maybe 180 Kg of meat composed of perhaps 20 - 25% bone...

@Life_N_Times_of_Shane_T_Hanson: I've been to Uzbekistan, but I never saw that. I thought they were like making plates to deliver to restaurants, but it appeared peoplebwere there to buy it. More showed up as they were finishing it up. I would bet this was for communal gatherings say like holiday celebrations or something where they cooked for the whole town or perhaps a region. Then, modifed for commercial food productions... My guess. I know alot of Asian were very communal and familial orientated. I picked up on it while reading about Ghemgis Kahn, who had a lot of kids to feed... this would be perfect!?

@WMHarrison94: In the images that turned up they had a dining area (sort of making this up kind of - because I didn't count all the seats) that probably seated 300 or so... AND they did have 5 big pans, this was THE big one and the rest of them were about 1.2 meters in diameter.... Yeah they have 3 and a half floors of dining area...... https://dzen.ru/a/ZHpJPTmO5hTcJ71k https://avatars.dzeninfra.ru/g....et-zen_doc/9712766/p
