The might be reasons why she does what she does, or she is doing it, because "This is the way we have always done it" - or both...

But I think gutting the mellon, pureeing the entire thing with a potato masher - because I love the seeds and the fibre, and then converting a heated solution to a gelatin and then a fast cooling - would be better, easier, faster and less steps.

I'd go whole plant and would not filter anything..

I cannot see the reasons for deep frying it etc..

AND damn, water melon as a cold jelly - that is both a FRUIT, a DESERT and a MAIN MEAL....

Fuck it's good.

Maybe there are good reasons, maybe it's just a silly idea... I don't know.

Perhaps - try both.
