whats the best way to eat it? Should I heat it up?
I have a mind like a giant calculator.... and I am exceptionally good at making production lines and automation...
Assuming that your using a conventional bottom heat oven - or even a fan circulating oven....
Get trays that are about 10mm deeper than your Baklava,
Set up a a series of flat racks inside it....each, about 10mm above the tray below it.
Maybe you could then fit 6 or 8 trays in at a time.
Then you can fit MORE trays in, rather than just 2 or 3, and with a bottom heat, you can pull the bottom tray out, move them all down a rack, and stick in an uncooked tray at the top, and just rotate them in and out every 20 minutes (or what ever the cook time is.
AND is there room to use FLAT trays with a lip around them, and then to put the slices into a soaking tray, after cooking, and then to drain off the excess and then sell them and or box them?
I was thinking - properly set up, one tray on average every say 5 to 10 minutes = that starts to add up.

Sunday is the day of rest, or whenever you are off, i used to work very odd hours so my day of rest was whenever i got a chance, but back when i was younger and more religious it was Sunday that was the day of rest and church.
